To Margaret--Pancit!

Hey Margaret,

Well I just lucked out... My brother went to have dinner at his in-laws (his wife is Filipina) and he brought me some shrimp pancit! It was soo good. I got my fix for a little while but now think I should make it because it's an easy thing to heat up at work.

Hope you are well. I'm cringing over here because I'm watching baseball and NOt happy with today's scores...

mmmm good, accept the shrimp part(i don't eat any seafood or fish period ). I usually make it w/out meat, but sometimes I will add chicken. It is great to just heat up and go and really not hard to make(if i can make it, anybody can make it). I promise I will post it for the other woman, who are probably wondering what the heck you and I are talking about .

Tonight we went to our cajun friends house; they made gumbo(sausage&chicken). I got to eat fruit, but its just funny how many recipes I learn from all the friends we meet. Plus, a friend of ours over there is Filipino and we started talking about pancit. I told him I would have to make it for everyone when I feel better; hmmm that might be a while, maybe I should make it when I am up to it. He said, he has tons of lumpia that he just freezes until ready to eat (bachelor). I am sure you have had lumpia too. But, we can't have it on the diet ; huh.

You should make it and take it to work, but make sure no one else gets there hands on it. So, how are you doing? Pretty well, I hope. I am hanging in day by day, its not the worst pain so I guess I can look at that being a positive. I am just hoping to get thorn in my , that will make me stand up and say this is what I want and I won't stop until I get it. Ft. Sam Houston is in TX, so I am hoping that I can wiggle my way into there and I am going to see about the Dr. Albee in Atlanta. So, I know there will be a brighter day, but just hoping it can be while I'm in Tx for 5-6yrs. We'll see....
